Jalebi Baby: Nut-Free Indian Mithai

Jalebi Baby! Finally, a nut-free Indian dessert :)


Ingredients:

  • 1 cup of Flour

  • 1/4 tsp of Cardamom Powder

  • 2 tsp of Corn Starch

  • 1 tsp of Yeast

  • 3/4 cups of Warm Water

  • 1 tsp of Oil

  • 1 tbsp of Yogurt

  • 2 cups of Room Temperature Water

  • 3 cups of Sugar

  • 1 pinch of Saffron

  • 1 tsp of Lemon Juice

  • 1/2 tsp of Cardamom Powder

Steps:

  • Create batter by mixing Flour, Cardamom, Corn Starch, Yeast, Warm Water, Oil, and Yogurt.

  • Place batter bowl in a larger bowl of hot water so that batter dish floats.

  • Cover and let rest in dark for 1 hour.

  • Create sugar syrup by mixing Water, Sugar, Saffron, Lemon Juice, and Cardamom Powder over heat then let sit.

  • Heat oil for frying.

  • Pour batter into a ketchup bottle and create spirals in the hot oil. Fry for 1-2 minutes.

  • Place Jalebi on paper towel to remove excess oil.

  • Move Jalebi to sugar syrup and let soak.
